Azalea Inn and Gardens ~ Apple Crumb Bars

Azalea Inn and Gardens is a beautiful local Bed and Breakfast Inn. I have never had the pleasure of staying there but they were supper sweet and allowed me to take my niece Dani's Bridal shots there which you can see some of here.
Last week they shared this recipe on their Facebook page
and I knew I had to taste them ..
I have always been a recipe collector but I haven't tried anything new in a long time so I whipped these up and fell in love .. everyone that tasted them, loved them so I knew I had to share them with ya'll..

Apple Crumb Bars
Serves 24

Ingredients

1 1/2 cups packed brown sugar
1 1/2 cups rolled oats
3 cups all-purpose flour
3/4 teaspoon baking soda
1 1/4 cups butter, divided
5 cups thinly sliced cooking apples
 I chopped mine also 
2 teaspoons cinnamon
1 teaspoon fresh nutmeg
I added a pinch of cloves
1/2 cup sugar
3 tablespoons cornstarch
1 cup cranberry juice
1 teaspoon vanilla extract
Directions
1. In a mixer with paddle attachment combine brown sugar, oats, flour, baking soda and 1 cup plus 2 tablespoons butter until crumbly.

Reserve 2 cups for topping; lightly pat remaining crumbs into a greased 13-in. x 9-in. x 2-in. baking pan.
I used Parchment Paper and it work great ..
Arrange apples on top of crumbs; set aside.

2. In a saucepan, combine sugar, cornstarch, cranberry juice and remaining (2 TBS) butter.
Bring to a boil and cook until thick add vanilla then spread on top of apples. Sprinkle reserved crumbs on top.

3. Bake at 350 degrees F for 35-45 minutes or until top is lightly browned.

I also added broken walnuts on top the apples and when fresh cranberries come in season I will toss some of them in also..
I didn't have any cooking apples so my apples took longer to soften so I just cut the oven off and left it till I was ready to serve them. They turned out perfect.

    which is great
    cos if I made them I could eat 14 and pretend it only made 10!!!

    Wish I was heading that direction to check out the guesthouse
    but alas....
